Two Easy and Healthy Recipes

Here are two simple, healthy and quick recipes for you to make at home!

Heavenly Honey and Nutritiously Nutty Granola
This granola recipe is perfect for breakfast or a healthy snack. I really enjoyed making this one, and hope you do too! You can substitute some of the dried fruits and nuts with ones you prefer if you don't like the original recipe or have any allergies.
Preparation Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
200 g honey
1 tsp vanilla extract
300 g rolled oats
100 g natural almonds or pecans
75 g pumpkin seeds
75 g sunflower seeds
50 g raisins
50 g cranberries or goji berries
Instructions:
Melt the honey and vanilla together in a microwave.
Combine the oats, nuts and seeds together in a large bowl, with a spatula.
Pour the honey over the oats mixture and mix well.
Spread the mixture onto a shallow baking tray- lined with baking paper- evenly. Make sure it is a thin layer, if necessary, use two baking trays.
Bake for 25-30 mins at 180C, stirring occasionally to ensure it doesn't burn.
Then remove it from the oven, and stir in the dried fruit.
Store in a sealed container and bon appetit!
Tomato, Mozzarella and Basil Toastie
Enjoy this healthy, vegetarian and very easy snack.
Ingredients: Serves 1
Two baguette slices or two slices on wholegrain seeded bread
A handful of fresh, fragrant cherry tomatoes
Fresh Basil (a small handful)
Black pepper
Salt
Spinach (optional)
Extra virgin olive oil
Instructions:
Preheat the oven to 200C.
Slice each tomato in half, and slice the mozzarella into thin slices.
Pat dry the mozzarella slices.
Place spinach (optional), mozzarella and tomatoes onto each slice.
Drizzle some olive oil on top of each, season to taste with salt and pepper.
Place in the centre of the oven for 15 minutes.
